Mint Ice Cream Brownie Bars - Delicious & Easy To Make

There truly is nothing better than the texture of creamy cold ice cream paired with a soft chocolaty brownie. In high school I worked at an ice cream store and I we would always run out of brownies as an ice cream topping, because people loved the combo so much. You know me and loving a freezer full of quick and easy treats. Presumably something I can just grab and enjoy or make in advance for a party or playdate. My ice cream brownie bars are perfect for any occasion and truly the easiest to make. I love to make them and when I do, I am always transported back to my teenage years scooping ice cream. It was such a fun experience and really when I honed my ice cream obsession!

Of course you can skip making brownies from scratch and use a box mix, that is just fine! I’m the queen of making things easier. I’d say the real star of this treat is the creamy ice cream itself! I’m using Dreyer’s Slow Churned Mint Chocolate Chip ice cream because in my opinion, it is the best flavor combined with a chocolate brownie. Though, feel free to get creative and let your little ones take the reins when putting these together.

Keep in mind you’ll need a few hours for these bars to set before enjoying them. I like to put them together the night before to ensure that they have had enough freezer time. I also like putting the ice cream brownie bars together once Mila has gone to bed, so I can surprise her with the fun treat the next day. I recently made these bars for a pool party playdate I threw for Mila and her friends. All the girls loved the bars, I think out of everything served it was their favorite!

Mint Ice Cream Brownie Bars

Ingredients - box brownie mix, Dreyer’s Slow Churned Miny Chocolate Chip ice cream, 1 cup milk chocolate chips.

Directions - First bake the brownies using the directions on the box. You can also make brownies from scratch if you’d like. Bake the brownies in a 9 x 13 inch baking pan lined with parchment paper. Once the brownies are cooked, let them cool completely. Once the brownies have cooled, scoop 12 ice cream scoops on to the brownies. Use a spatula to spread the ice cream into a layer on top of the brownies. Place in the freezer while you melt the chocolate chips. In a microwavable bowl, melt the chocolate chips for 30 second intervals until the chocolate is melted and smooth. Pull the ice cream brownies out of the freezer and drizzle the melted chocolate on top. Freeze the ice cream and brownies for 4 hours or overnight. Once completely frozen, remove the ice cream brownies from the pan and cut into bars. Enjoy! Store in an air tight container for up to 2 weeks.
