Apple Yogurt Coffee Cake - The Best Fall Recipe

 

My Apple Yogurt Coffee Cake, the very best apple cake made rich and tangy with Stonyfield Organic Yogurt. This cake is the perfect thing to make through out Fall and enjoy warm during those chilly mornings. Best with a piping hot cup of coffee or tea. A second slice enjoyed in the afternoon for a mid-day pick me up…I won’t tell anyone! The best part of this cake is its moist interior, thanks to the luscious yogurt used in the recipe. Stonyfield Organic Yogurt is referred to as my secret weapon of sorts, since I typically add it into cakes and muffins to achieve that soft texture within. A few weeks ago the girls and I were invited on a virtual Stonyfield Organic farm tour to learn more about just how their dairy is supplied to them. While I had my reservations about how much we’d actually be able to get out of a virtual farm tour, Mila and I woke up early and came ready to meet some cows! Within minutes our minds were blown and we truly gleaned SO MUCH from the tour. We were able to actually meet the cows, see how + where they live, meet the dairy farmer who seem to love these cows as if they were their blood relatives. I was inspired and my four year old was in awe of the kids who lived on the farm! We sat and watched excitedly. When it came time for questions we both were so invested, I asked what the kids favorite things to do on the farm were. Most all of them said spending time with the cows. One little boy said he loved helping his dad. Meeting the farmers was my favorite because I loved seeing how dedicated they are in loving their cows. Ultimately having them produce the best dairy for Stonyfield Organic. Mila was more concerned for the cows and if they were able to eat anything special for during the holidays. Mila’s question made the farmers laugh and they answered that sadly, cows do not eat anything special during the holidays. But I’m guessing they play festive music for them maybe, or at least I’d like to think so. 

One major takeaway that has stuck with me is how important the farmers are to Stonyfield and vice versa. Their teamwork in creating the best product was so present during our virtual tour, nearly tangible. The pride the farmers have in cultivating the very best dairy for Stonyfield Organic yogurt just makes me love our yogurt in the refrigerator even more! 

Stonyfield Organic Yogurt was the first yogurt I introduced to all three of my babies.  It has always been a brand I love and trust. Being able to partner with them this month has been a total dream!

Of course I had to add in the graphic that helped Mila the most visualize what exactly a cow consumes with the, ‘What is in an organic cow’s diet.’ These three were our favorite and most educational things to learn during our tour because I feel like they directly effect the dairy we then consume with Stonyfield Organic yogurts. While Stonyfield Organic Yogurt is my secret baking ingredient, it is no secret that our family’s favorite yogurt to enjoy is in fact Stonyfield. As I mentioned before, it was the yogurt brand we first introduced to all three of our children and we have loved + trusted the brand for just over 10 years. A delicious spiced apple coffee cake loaded with fruit and made moist with yogurt. Best enjoyed in the mornings and a sneak slice in the afternoon. This cake comes together so quick and easy, a definite must try this Fall season!


Ingredients

Cake

1/4 cup softened unsalted butter
3/4 cup brown sugar
1 egg
1/2 cup Stonyfield Organic Plain Yogurt
2 tsp vanilla
1 tsp cinnamon
2 1/2 cups flour
1/2 tsp baking soda
1/4 tsp salt
2 cups green apple diced
Squeeze of lemon or lime

Cake Topping
1/4 brown sugar
1/4 cup flour
2 tbs butter
1 tsp cinnamon
1/4 cup oats


 
 

Directions

Step 1: Preheat your oven to 350 degrees. Butter and flour a 9x9 baking dish.

Step 2: In a stand mixer cream together your brown sugar and butter. Once those two are smooth, add in your egg and vanilla.

Step 3: Mix in your yogurt until the mixture becomes smooth.

Step 4: Sift your dry ingredients; flour, salt, baking soda, cinnamon.

Step 5: Slowly add the dry ingredients into the wet and mix until it just combines.

Step 6: Carefully fold in your diced apples

Step 7: Add your apple cake batter into the buttered/floured baking dish.

Step 8: In a small bowl mix your Cake Topping ingredients and use your fingers to combine. Gently press the mixture onto the top of your cake.

Step 9: In a small bowl mix your Cake Topping ingredients and use your fingers to combine. Gently press the mixture onto the top of your cake.

Step 10: Bake the cake at 350 degrees for 30-40 minutes or until a toothpick inserted in the center comes out clean.

Serve warm with a dollop of Stonyfield Organic Yogurt on top!
