Churro Waffles

 

The one you have all been waiting for! Give a drumroll for our Churro Waffles! I shared these on Instagram and everyone went nutty for them. I’ve been promising the recipe and here it is. FINALLY! These cinnamon and sugared beauties are simple and beyond delicious. They satisfy our household craving for Disneyland churros and we’ve been making them a few times a month to sooth our souls. Pandemic Emotional Eating, it’s a real thing!

Let’s talk waffle makers! I have the Dash Mini Waffle Maker in Pink but it comes in tons of different color options. I bought this tiny thing randomly at Target years ago and LOVE IT! Seriously I bought this waffle maker before Mila was born to make waffles for Dan and I on Valentine’s Day haha! It still cranks out the best waffles! Yes it only makes one waffle at a time but its makes crazy good waffles! Slightly crisp and fluffy on the inside. Sometimes I make a ton of waffles at once and freeze them to eat them through out the week. You can warm them in the toaster! I swear by this waffle maker and you can find it HERE.

Churro Waffles


 
 

Ingredients

2 cups flour

4 teaspoons baking powder

1 tablespoon sugar

1 teaspoon cinnamon

1/4 teaspoon salt

1 3/4 cup milk

1/2 cup vegetable oil

2 eggs

1 tsp vanilla

Waffle Coating

1/4 cup sugar

1/2 tablespoon cinnamon


 
 

Directions

Step 1: In a large bowl whisk together your dry ingredients; flour, baking powder, salt, cinnamon and sugar. Then set aside.

Step 2: Whisk in your eggs, vanilla, oil and milk.

Step 3: Whisk until your batter is mostly smooth. A few lumps are ok!

Step 4: Prep your waffle iron. I always like to place a layer of foil underneath my waffle iron to catch any batter than spills out the sides.

Step 5: Use a non-stick cooking spray on your waffle iron. You’ll want to use about 2 ounces of batter for each waffle. Though your measurements may vary depending on your waffle iron.

Step 6: While your first waffle cooks, mix together the additional sugar + cinnamon for the waffle coating in a shallow bowl.

Step 7: Once your waffle has cooked, use a wooden skewer, tongs or a fork to pierce the waffle and transfer it to the cinnamon + sugar bowl. Use a spoon to fully coat the waffle with cinnamon and sugar.

Step 8: Keep your waffles warm in the oven set at 200 degrees while you continue cooking + coating the rest of your waffles. Or serve them right away as you cook them!

Step 9: Enjoy them as is or topped with butter + syrup!
