Rainbow Donut Mini Muffins
Maya and I are kicking off Spring Break with these Rainbow Donut Mini Muffins! The moments I have with Maya during the day are like little treasures. Our moments together vividly remind me of my time with Ryan years ago. I can see tiny glimpses of Ry within Maya sometimes and it makes me feel as though he could very well be sitting with us in the kitchen. A lot of the time I run through the motions. Ticking things off my to do list and only stopping for small moments at at time to reflect. Looking at Maya and I in the kitchen making these mini muffins brought all sorts of memories and emotions to the fore front of my mind. It forced me to stop and really remember my life with Ryan. Sometimes I don’t like to sit and think about the past, it makes me more sad than I’d like. However, this time as I recalled all the fun Ryan and I used to have in the kitchen together, I was able to see so many similarities between my past and my present. I feel so grateful. It also reminded me that I need to stop and let myself feel sad. Feeling sad isn’t always a bad thing. Feeling sad often makes us feel more grateful for the times when we feel happy.
Anyways, if you have any donut lovers in your home I hope you take the time to bake these little gems with them. Make some memories in the kitchen with your kids so you can hold on to them forever. Once again, food is food right? But it can also be so much more. For example, these mini donut muffins now bring with them a flood of good memories for me. I hope they do the same for you.
We call these donut muffins because they taste similar to a cake donut. Here we used a rainbow glaze, but you could toss them in powdered sugar or a cinnamon + sugar mix. I love making them in a mini muffin pan because everything is better bite sized. You can also line the muffin pan with mini cupcake liners, but I love greasing the pan instead because it gives a nice little crust on the outside. Lastly, if you aren’t into food color try natural food color or skipping it all together! Keep the glaze white or do another coating like the ones I mentioned above. :)
Rainbow Donut Mini Muffins
Ingredients
For The Donut Muffins
1/2 cup sugar
1/4 cup melted butter
1/2 cup milk
3/4 tsp cinnamon OR nutmeg
1 tsp baking powder
1 cup flour
For The Glaze
2 cups powdered sugar
1 tsp vanilla
4 tbs milk
*Optional; a few drops of food color.
*Other Donut Toppings Could Be; Powdered Sugar or a Cinnamon + Sugar Mix.
Makes 24 Mini Muffins OR 12 Regular Sized Muffins
Directions
Step 1: Start by pre-heating the oven to 375 degrees and greasing a mini muffin pan with cooking spray.
Step 2: In a mixing bowl whisk together the sugar, melted butter until well combined.
Step 3: Whisk in milk.
Step 4: Switch to a wooden spoon or spatula and stir in the flour, baking powder and cinnamon until a batter forms.
Step 5: Use a scoop or 1 tbs measure and fill the muffin pan spaces. Leave a bit of room at the top for them to rise while baking. Bake at 375 degrees for 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Step 6: Let muffins cool for 10 minutes. Then remove them from the pan and then let them finish cooling completely on a cooling rack.
Step 7: While the muffins cool, prep your glaze. In a mixing bowl whisk together the glaze ingredients; powdered sugar, vanilla and milk. If you are making different colored glaze, pour small amounts of glaze into different bowls and add the food color. Keep in mind this step is optional. You can keep the glaze white OR try coating the muffins in powdered sugar. You can also coat them in a cinnamon + sugar mixture.
Step 8: Once the muffins are completely cool you can dip the tops into glaze. Let the glaze set for a few minutes and then enjoy!
