Lemon Crumb Donuts - A Perfect Spring Time Treat

You guys know I love getting my kids involved in the kitchen. I have found that baking recipes are the easiest and most fun for both of us. I typically pre-measure all the ingredients and set them all out prior to bringing Mila into the kitchen. This way she can just help me put everything together and mix it up.
Since this recipe calls for yogurt, be sure to get the plain Greek yogurt. This way you aren’t adding any other sugars or flavors to the batter.
This recipe also allows for a new kitchen skill to be taught. It was Mila’s first time using the microplane to zest the lemon. Of course I helped her every step of the way, but it was fun teaching her about a new kitchen tool and what it does.
Little ones also love sifting dry ingredients. Sifting also allows for a smoother batter, so try not to skip this step. We bought our sifter from Crate & Barrel but you can get them pretty much anywhere in the kitchen utensils area. Sifting is one of Mila’s favorite things to do while helping me in the kitchen.
I mention in the recipe below that I like to use a piping bag to get the batter into the donut pan. It is a ton easier than using a spoon. Both the piping bags and donut pan I bought from Michaels Craft Store in their baking section!

Lemon Crumb Donuts
What You Need
Donuts
1 Egg
3/4 Cup Sugar
1/2 Cup Vegetable Oil
1 Cup Plain Greek Yogurt
1 Tablespoon Lemon Zest
1 1/4 Cups Flour
1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
Pinch of Salt
Juice From One Lemon
Crumb Topping
1/4 Cup Flour
1/3 Cup Brown Sugar
1 Tablespoon Lemon Zest
4 Tablespoons Unsalted Butter
What You Do
-First pre-heat the oven to 350 degrees.
-Brush a little bit of oil on to the donut pan OR use non-stick baking spray.
-In a large bowl, whisk together the egg and sugar until the sugar is fully dissolved.
-Continue to whisk the egg and sugar mixture then add in the vegetable oil, yogurt, lemon zest and lemon juice.
-In a bowl sift together all your dry ingredients; flour, baking powder, baking soda, and salt.
-Slowly add in your dry ingredients into your wet ingredients until a batter forms.
-You can use a spoon to pour your batter into the donut pan. Though I have found that using a piping bag is a lot easier. Place your batter into a piping bag and evenly distribute into your donut pan.
-In a small bowl, with a fork mash together the crumb topping ingredients. Mash together until you get a wet sand like texture.
-Top each donut with the crumb topping.
-Bake the crumb donuts for about 13-15 minutes or until golden and fully cooked.
-Let the donuts cool before taking them out of the donut pan.
-Enjoy for up to a week. Store the donuts in an air tight container.
