Pumpkin Biscuits + Creamy Jimmy Dean Sausage Gravy

 

Today I am hitting the refresh button on a cozy breakfast classic made with Jimmy Dean Fresh Sausage! Biscuits and Sausage Gravy is one of my most favorite things to enjoy for breakfast or brunch, especially during the holiday season. It is decadent and most delicious with savory bites of sausage throughout. I have happy memories indulging on this classic with my dad at a diner we use to frequent when I was a kid. We’d go just us two on the weekends. My dad would always ask for a booth near the window and together we’d laugh and enjoy our favorite meal of the day, breakfast. I of course, would always order the biscuits and gravy.

Most everyone is familiar with biscuits and sausage gravy. Though this year I’m taking them to the next level they deserve! I’m pairing the classic creamy Jimmy Dean Fresh Sausage gravy with my pumpkin biscuits. The result? A sweet and savory pairing that is incredible with a hint of warm spice. Truthfully I’m now partial to my fresh take on this breakfast classic! I love using Jimmy Dean Fresh Sausage for this recipe because you get the most flavorful gravy. I brown the yummy sausage first and then continue adding in the ingredients all in the same pot. Layering all the flavors as I go but keeping the Jimmy Dean Sausage prominent throughout. The taste and smell floods my mind with memories!

Creamy Jimmy Dean Sausage Gravy + Pumpkin Biscuits


 
 

Ingredients

Sausage Gravy

*Serves Six - Eight

1 9.6 oz package Jimmy Dean Pork Sausage

1/4 cup flour

3 cups whole milk

1/2 tsp salt

1 tsp black pepper

Pumpkin Biscuits

*Makes About 12 Biscuits

1 stick COLD unsalted butter

2/3 cup pumpkin puree

3/4 cup milk

2 cups flour

4 tsp baking powder

1 tsp baking soda

pinch of salt

1 tsp pumpkin spice (or cinnamon)


 
 

Directions

Step 1: Start by making your pumpkin biscuits. In a large bowl sift together the dry ingredients; flour, baking powder, baking soda, salt, and pumpkin spice. If you don’t have pumpkin spice then you can use cinnamon!  

Step 2: In another bowl whisk together the wet ingredients; pumpkin puree and milk. Then set aside.   

Step 3: Cut your cold butter into squares and work it into the dry ingredient mixture. Use your *clean* hands to pinch the butter into the dry ingredients. It is really important to use cold butter, so it does not melt too much while you mix it with the flour. Work the butter into the dry ingredient mixture until the butter is the size of peas throughout and it takes on a sand like texture.

Step 4: Add the wet ingredients into the dry ingredients slowly and work with your hands until a dough forms.

Step 5: Once the dough comes together, wrap it in plastic wrap and chill in the refrigerator for at least 10-20 minutes or until the dough is chilled through. You’ll want to chill the dough to keep the butter intact throughout. This will ensure a fluffy, flaky biscuit. 

Step 6: Once the dough is chilled, on a floured surface, roll the dough until it is about a 1/2 inch thick. Use a floured biscuit or circle cookie cutter to punch out your biscuits. If you don’t have either then use a cup or small bowl to cut out the biscuits! Anything circle will do, just make sure the circles are about the size of your palm.

Step 7: Place biscuits onto a baking sheet lined with parchment paper or a silicon baking mat.  Brush the tops of each biscuit with milk and bake at 450 degrees for about 10-15 minutes or until slightly golden brown.

Step 8: Once your pumpkin biscuits are cooling it is time to put together your gravy which comes together in minutes! In a Dutch oven or deep skillet over medium heat brown the sausage. While the sausage cooks, ready the rest of your ingredients. *Note: be sure to cook your biscuits before making the gravy as the gravy comes together pretty quickly.

Step 9: Once your sausage is cooked through, sprinkle in the flour, salt and pepper and stir to combine and coat all the sausage.

Step 10: Switch to using a whisk now and slowly add in your milk, continue whisking. You’ll want to keep whisking and adding the milk in slowly so you can break up the flour and keep it from getting lumpy.

Step 11: Once all the milk is in, whisk every so often and reduce the heat to let it simmer for about 2-3 minutes. You’ll see it thicken up a bit and it will ready to serve hot over warm pumpkin biscuits! The sweet and savory here is out of bounds! Perfect for any holiday morning breakfast!
