My Momma's Quick Horchata
When I was growing up my mom used to make us this horchata drink as a special treat for after school or dinner. We’d always get excited about it and the taste brings me right back to gulping it down in our kitchen. I love recreating my mom’s recipes as they bring me right back to my childhood. Typically making horchata takes a long while but this recipe gets the rice and cinnamon flavor just right. Served over iced it is the absolute best.
If you are into horchata like us, this recipe is must try. This recipe makes about eight cups of horchata and you can keep is chilled in the fridge for up to 3 days. (Just be sure to stir it well before drinking) If you are new to this drink, it combines rice, cinnamon, milk, and little bit of sugar to make a creamy concoction that is delicious!
My Momma’s Horchata
What You Need
1/2 cup uncooked white rice
1 cup water
5 cups milk
1/2 tablespoon cinnamon
pinch of salt
1 1/2 teaspoon vanilla extract
1/3 cup sugar
What You Do
In a medium sauce pan combine the rice, water, cinnamon, salt and one cup of the milk. Cook this on low heat for about 15-20 minutes.
Remove from the heat and add to the blender with the rest of the milk, vanilla, and sugar.
Blend this mixture for about a minute and half to really give it a chance to break down the rice and dissolve the sugar.
Now over a pitcher or large bowl, use a mesh strainer and pour the horchata milk. The strainer will catch any left over rice bits.
Enjoy over ice topped with a bit more cinnamon!
