Simple Homemade Garlic Fries

Who starts the year off with Garlic Fries?! Apparently we do and I’m fine with that. Our family has such a love affair with potatoes in fry form. I’ve been making them as a side for dinner almost once a week. They are so easy it is hard not to toss them on the menu. In the recipe below I am using russet potatoes, but we swap those for sweet potatoes often and the recipe stays the same. I am almost positive a ton of you already make these in your own way. Just thought I’d share here how we like ours.

I love seeing this fresh babe wrapped close to my body. It feels so good and having her in the kitchen with me is special. Such a squishy little suos-chef! My other sous-chef, Mila, has taken to bringing activities into the kitchen lately. She loves coloring or playing with play dough at the table until it is time to eat. Which is great because it keeps her occupied while I get dinner on the table. Although when we are making something sweet, then Mila is all hands in!

Simple Homemade Garlic Fries

What You Need

3-4 large russet OR sweet potatoes

2-3 tablespoons olive oil OR avocado oil

4-5 garlic cloves finely diced

1/4 cup of fresh parsley leaves roughly chopped

salt and pepper to your liking

What You Do

-Start by giving your potatoes a good rinse. Then use a dish towel to fully dry them.

-Pre-heat your oven to 375 degrees and prep a baking sheet lined with foil.

-Slice your potatoes into fries. Try to keep them all similar is size so they all cook at the same time. If some are smaller than others, the smaller ones will burn while the larger ones are still cooking.

-In a large bowl toss your fries in 1 tablespoon of oil, salt, and pepper. You can salt and pepper however you like. I like to use about 2 hearty pinches of salt and about a 1/2 tablespoon of pepper. ( We like a lot of pepper) It is always good to salt less and then after they are cooked you can add more salt if you’d like.

-Evenly spread your oiled fries onto the baking sheet. Be sure to spread them evenly so they cook nice and crisp. If they are too close together or if the baking sheet is too crowded they tend not to crisp up and just stay soft. Bake them for about 15-20 minutes flipping them with tongs halfway through.

-While your fries are baking, peel and chop the garlic.

-In a small sauce pan warm up 2 tablespoons of oil. Slowly sauté your chopped garlic until they are just golden brown. Keep an eye on it so the garlic doesn’t burn. I love sautéing the garlic because it gives it great flavor and texture to the fries.

-Once the garlic is cooked take it off the heat and keep it in the pan with the oil.

-Give your fresh parsley a rough chop.

-Once your fries are fully cooked place them into a large bowl and toss with the sautéed garlic and oil. Top with fresh parsley and ENJOY!
