Simple S'mores Cookies
It is no surprise around here that cookies are my absolute favorite. There are tons of cookie recipes featured on my website and if I had to choose one dessert to endlessly devour … it would be cookies. Warm, chewy, cookies that are packed with chocolate and candies! You get the idea. A few weeks ago I shared a quick video on Instagram that I was working on a s’mores cookie and so many of you requested the recipe. You’ve all been patiently waiting, like Maya in the photo below, for these S’mores Cookies! So, I’ll stop talking and let you have at ‘em!
Simple S’mores Cookies
Ingredients
1 1/2 cups all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp corn starch
1/4 tsp salt
10 tbs room temperature unsalted butter
1/4 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla
3/4 cup chocolate chips
1 cup mini marshmallows
5 crushed graham crackers
2 Hershy’s Chocolate Bars to add to top of cookies

Makes About 15 Using A 2oz Scoop
Directions
Step 1: Start by sifting the dry ingredients; flour, baking powder, baking soda, corn starch and salt all together and set them aside.
Step 2: In a stand mixer bowl fitted with paddle attachment cream together the butter and both sugars until fluffy. This takes about 2-3 minutes. You can also use a hand mixer.
Step 3: Next add in the egg and vanilla. Continue to mix until combined.
Step 4: Slowly add in the dry ingredients to the wet and mix until it just comes together.
Step 5: Toss in the chocolate chips, marshmallows and crushed graham crackers. Mix until everything is just combined.
Step 6: On a baking sheet lined with parchment paper, scoop out the cookie dough and place on the baking sheet about 1 1/2 inches a part. I use THIS cookie scoop for the perfectly sized cookies! If you don’t have one and love baking cookies, I highly recommend it. NOTE: The marshmallows within the cookie dough will puff up and melt as the cookies bake. They make this cookie extra chewy. The marshmallows on the cookie edges will caramelize a bit as they bake!
Step 7: Bake at 350 degrees for about 14 minutes. When the cookies are turning golden brown around the edges they are ready!
Step 8: Take the cookies out of the oven and place one piece of chocolate and 2 mini marshmallows on top of each cookie in the center. Gently press them in so the toppings stay put. Then set your oven broiler on high and put your cookies back in for 1 to 2 minutes. Keep an eye on them! You just want them to be under the boiler so the marshmallows can gently toast up.
Step 9: Enjoy these cookies slightly warm!
