A Holiday Vanilla Pudding Cake

 

A simple cake you can make in no time that will satisfy everyones holiday sweet tooth. It truly is just a vanilla cake, though I’ve ramped up the flavor and texture by adding a childhood favorite. Instant pudding. Yes, it may be a bit taboo to add instant pudding mix into your cake batter. But in my kitchen there are no rules. What is the result when you combine pudding mix into this cake batter? A truly soft and, everyone’s favorite word, moist cake that is so undyingly vanilla flavored. It is a dream. A sweet dream!

Vanilla Pudding Cake


 
 

Ingredients

2 1/2 cups flour

1 cup sugar

3 teaspoons baking powder

pinch of salt

1 packet of instant vanilla pudding mix

1 cup hot water

1/2 vegetable oil

1 cup milk

1 teaspoon vanilla

2 eggs

*Optional. Top with cold Cool Whip and festive sprinkles!


 
 

Directions

Step 1: In a large bowl or stand mixer start by mixing your pudding mix with the hot water and milk.

Step 2: Whisk in the eggs, vanilla, and oil until everything is well combined.

Step 3: In another bowl sift together the flour, baking powder, sugar and salt.

Step 4: Slowly add in the dry ingredients to the wet and mix until a smooth batter forms.

Step 5: Pour your cake batter into a greased 9x9 or 9x13 pan.

Step 6: Bake the cake at 350 for about 35-40 minutes or until a toothpick inserted into the center comes out clean. The baking time may differ depending on the size of a cake pan you use.

Step 7: Once the cake is baked and cooled, serve it with a dollop of frosting or Cool Whip + festive sprinkles!
