Rudolph Almond Butter Sandwich Cookies

Tis the season to turn anything and everything into something festive! Since the day after Thanksgiving I haven't stopped blaring the Christmas music, putting out holiday decor and baking! I'm baking everything even dinners or using my crock pot. I also am only wearing my high rise jeans now ... because of all the baking. Tis the season to indulge just a bit guys!

My most favorite cookie in the world is a Nutter Butter. I am not embarrassed at all to say that, I truly LOVE Nutter Butters. Of course growing up my mom never let us have them, she found a way to make them at home. I still use her recipe and even posted it on my blog a few years back (search peanut butter cookies and you'll find a few of my favorites). This time around I used almond butter and added some dark chocolate Rudolph decor! The recipe is below. It is super simple and I think your family will enjoy assembling their cookies. The filling is so dang tasty, I'd approve a double stuff. ;)
