Chocolate Peanut Butter Ice Cream Bites

If you been reading my blog for a while now, you know my family and I have a deep obsession with ice cream. We have this nearly intimate relationship with ice cream and can’t seem to get enough of it. Typically we like to celebrate the little things and the big things in life with ice cream. For example, after a great week at pre-school I’ll treat my daughter to some frozen yogurt at our favorite place near our house. If my husband is having a bad day, I like to surprise him with Drumsticks or some other ice cream novelty. I love when he opens the freezer and gets excited like a little kid. I know most of you know that after my husband and I lost our three year old son we frequented couples therapy as a way to cope and deal with our loss. Every time after our therapy session we’d go get ice cream together. It was like a creamy delicious light at the end of a heavy time.

Something as simple as ice cream can make our days brighter and lift our moods. I’ve shared numerous times of ice cream doing exactly that on my social media and here on my blog. As I just mentioned above, Dan and I truly have a soft spot for ice cream. I thought it would be fun to make these simple ice cream bites together. I love cooking with my husband and even more so if what we are making is a sweet treat. To be honest, we like to put Mila to bed a little early some nights and either make dinner or dessert together alone at least once a month. It is a nice way for us to connect and have a little fun without having to schedule a date night.

You’ll only need four ingredients to whip up these delicious ice cream bites, check out the recipe below.

Ingredients - 4 cups of Dreyer’s Vanilla Ice Cream, 1 bag of Semi-Chocolate Chips, 1/2 cup crisp rice cereal, 1/2 tablespoon coconut oil, 1/2 cup Smooth Peanut Butter Makes 15-20 Ice Cream Bites

Directions - In a square baking dish spread the Dreyer’s Vanilla Ice Cream into a thin layer. Place back into the freezer while you melt the peanut butter. In a microwave safe bowl melt the peanut butter until it is smooth and can be easily drizzled. Drizzle the melted peanut butter on to the layer of ice cream. Let this freeze for up to 5 hours or overnight. Once the layer of ice cream drizzled with peanut butter is frozen through, cut it into bite sized pieces about an inch or so wide. Place the ice cream bites back into the freezer while you melt the chocolate. In a microwave safe bowl, melt the chocolate chips and coconut oil at 30 second increments until the chocolate is smooth. Be sure to stir the chocolate in between the 30 seconds each time. Next, fold in the crisp rice cereal and stir until the cereal is fully coated in the chocolate. Now take out a few ice cream bites at a time and dip them in the melted crisp rice cereal chocolate. Use forks to help you handle the ice cream bites being dipped into the chocolate. Place the ice cream bites back into the freezer for at least 4 hours to ensure they are frozen solid. Once fully frozen, enjoy! Keep in the freezer in an air tight container for up to 2 weeks.
