Two Game Day Eats Everyone Will Love

We recently created fun content for Ziploc and their NFL branded products. We shared that content of social media this week and had the best time working with them! Since Dan is such a football fan and avid viewer I thought it would be delicious to create two recipes to enjoy during game day. I asked you all via Instagram which recipe you’d like to enjoy the most and the votes are pretty much even. So below I’ve listed the recipes for both of these yummy eats. They are simple to make and everyone will love them! These both are great for game day or family parties.

Dan’s favorite are the Chicken and Waffle bites, my favorite are the Caramel Apple Cookies. Which would you choose?!

Chicken and Waffle Bites

What You Need

For The Chicken

1 cup flour

1 cup cornmeal

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

hearty pinch of salt

1 pound chicken breast tenders cut into bite sized pieces

2 eggs 

1/2 cup vegetable oil OR baking sheet lined with parchment paper with oven set at 375 degrees

For The Waffles

2 cups flour

2 tablespoons sugar

4 teaspoons baking powder

1 teaspoon vanilla

2 eggs

1 1/2 cups milk

4 tablespoons of melted butter

nonstick cooking spray or a few tablespoons of oil with a pastry brush to brush on the waffle iron

Directions

-Since my waffle iron is small I like to make all my waffles first and keep them warm in the oven while I cook my chicken. 

-Whisk together all the waffle batter ingredients until the batter is smooth. 

-Once your waffle iron is ready, spray nonstick cooking spray or use a pastry brush to brush on some oil. This way your waffles won’t stick to the waffle iron.

-Depending on the size of your waffle iron you’ll pour a bit of batter into the iron, close and let the waffles cook. 

-Once all your waffles are cooked, wrap them loosely in foil and keep in the oven set at its lowest setting. This will keep them warm until it is ready to serve them. 

-Next prep your dredging station. You’ll need three shallow bowls. I like to fry my chicken in a pan with some vegetable oil, but you can also bake these in the oven at 375 degrees until the chicken is cooked through and crisp.

-In the first bowl whisk together your flour, salt, pepper and garlic powder. In the second bowl whisk your eggs. In the last bowl pour your cornmeal. Next prep either your baking sheet or your frying station. 

-If you are frying your chicken like me, then prep a plate lined with paper towels where your chicken can rest after frying. I keep my frying pan on medium heat, it is important to cook the chicken slow and low. This will ensure the chicken will cook through with out burning the outside.

-While the chicken is cooking whisk together 2 tablespoons of yellow mustard, 1 tablespoon of honey and a pinch of salt and pepper. Set this aside. If you need more use the 2 tablespoons to  1 tablespoon honey ratio. 

-Once your chicken is cooked, place a piece on top of a waffle and drizzle with the honey mustard!

Caramel Apple Cookies


What You Need

1 cup flour

2 teaspoons cinnamon

1/2 teaspoon baking soda

pinch of salt

1 stick of softened butter

1/2 cup brown sugar

1/4 cup sugar

1 egg

1 teaspoon vanilla

1 apple cut into small pieces

1 cup soft caramel candies

2 tablespoons water

Directions

-In a bowl sift together your; flour, salt, baking soda, cinnamon and set aside.

-In a large bowl, whisk together your butter and your white and brown sugar. Whisk these until they come together nice and fluffy. 

-Next whisk in your vanilla and egg. 

-Using a wooden spoon or spatula slowly mix in your flour a little bit at a time. 

-Lastly fold in your apple pieces. 

-Using a 1 tablespoon, measure out your cookie dough and drop each one onto a baking sheet lined with parchment paper. Be sure to leave about an inch of space around each cookie. 

-Bake the apple cookies at 350 degrees for about 10-12 minutes. 

-Once the cookies are all baked and cooled melt your caramel.

-In a small sauce pan melt your caramel and water until smooth. Keep the caramel on low heat and stir continuously to keep it from burning. 

-With a spoon or a fork, drizzle each cookie with caramel. Sprinkle a bit of salt on to each cookie while the caramel is still warm. 

-Enjoy!

I grew up in San Diego so I’ll forever be a Chargers fan even if they moved. Dan is a Rams fan. We love watching football together even if our teams aren’t playing. Plus Dan always is rooting for someone because of his Fantasy Football league. I enjoy the eats more than the game, though relaxing with the game on during Sunday feels really good.
