This has to be my most favorite month of the year. I’m just now understanding this. I mean I’ve always love October and Halloween! Though, ever since becoming a mother my love for October has severely deepened and now all I want to do is dress up and get in the spirit however I can! For this video I didn’t have to purchase a fog machine, but I did the night before. Holy moly I am SO glad I did and have been using it now to make dinnertime a little more spooky and fun. I also bought this witches hat for three dollars and pick up Mila from school wearing it! You guys, it is so fun to let holidays consume you!
I partnered with Dole Packaged Foods to create these festive fruity frozen bars that mimic the look of the iconic candy corn. These fruity bars are fairly simple to make, they just take a bit of time to put together. I like putting these together in the evening so we can enjoy them the next day. I love that these fruity bars are more on the healthier side during a month that is pretty centered around candy. Plus, the use of Dole Packaged Foods offers convenience but a great nutritional boost.

What You Need
*Your measurements will depend on the size of your pop mold. For this I like to use coconut milk, Dole 100% pineapple juice, Dole frozen pineapple + mango and Dole mandarin fruit bowls.
What You Do
-To start pour a bit of coconut milk into each mold. You just want to fill it a little as shown in the video. Then place that into the freezer for an hour. You’ll want to freeze each fruit layer so when the frozen fruit bar is finished you see distinct colored layers.
-Next blend up your mandarins with the pineapple juice. Pour the mixture through a sifter to get rid of any pulp, this will make your frozen fruit bar nice and smooth. Place back into the freezer for an hour.
-Blend a handful or so of frozen pineapple + mango with pineapple juice until smooth. Add this on top of your frozen mandarin layer.
-Add in your pop mold sticks and freeze over night or for at least 6 hours.
-Remove from the pop mold and enjoy!
-Store in the freezer for up to a week.
