Baked Pumpkin Donuts
It has been a little more than a week since I’ve posted to my blog. The end of October sort of came and went quickly. We took a red eye flight to Orlando on Halloween night too which sort of made us all a mess. Though once in Orlando we made it to Walt Disney World for Mila’s first visit and my second 1/2 marathon. I’ll be sharing more about our time there soon!
I wanted to share this donut recipe as soon as possible with you all. It is so simple and delicious. Donuts are a family favorite around here and I thought this recipe would be so fun to bake together over the weekend. The weather here is finally starting to cool off and with all that is happening in our world right now, time spent at home cuddled with your family and a sweet treat seems to be exactly what we need.
The news this week has been nothing short of traumatizing. So many people are suffering the loss of their loved ones and their homes. Life at this point just seems to be so unfair that trying to seek any positivity is worthless. Nothing makes sense and when people have answers others fight with those answers. I don’t have any answers myself or anything helpful to offer. We’ve donated to the families who are being affected by the fires here. I’ve cried and prayed hard for those parents who lost their children in the awful shooting this week. It all seems pretty ineffective though.
Riddled with anxious nerves the only thing I can truly do is love harder on my family and those that are close to me. We truly never know what tomorrow will bring and if it brings terror, then I’ll know in my heart I’ve loved as much as I can. We are trying to maximize our days and live life to the fullest only because you just never know when it will all be taken away. My husband and I know that pain all to well. I’m sending you all my love and any positivity I have left. Praying we all find a smile and a hearty laugh this weekend. Love hard on your on family. I can’t say tomorrow will be a better day for sure, but I can hope for a better tomorrow. My family and I will be clinging to that hope!

Baked Pumpkin Donuts
What You Need
1 cup flour
1 teaspoon baking powder
1 1/4 teaspoon cinnamon + 1 tablespoon cinnamon
pinch of salt
1/2 cup pumpkin puree
1/3 cup brown sugar
1/4 cup milk
1 egg
2 tablespoons melted butter + 2 additional tablespoons of butter
1 teaspoon vanilla extract
2 cups white sugar
donut pan
2 tablespoons of oil or non-stick cooking spray
What You Do
-You’ll want to start by preheating your oven to 350 degrees. Prep your donut pan too by either spraying it with non-stick cooking spray or brushing oil onto it.
-In a medium sized bowl, whisk together your; flour, baking powder, 1 1/4 teaspoon cinnamon and salt. Set these dry ingredients aside.
-In a large bowl whisk together your; pumpkin puree, brown sugar, milk, egg, 2 tablespoons butter and vanilla extract until combined.
-With a wooden spoon or spatula, slowly mix in your dry ingredients. Mix in a small amount of the dry ingredients at time until your donut batter forms.
-You can use a piping bag or a spoon to fill your donut pan. Just be sure to add the same amount of batter into each donut space so they cook evenly.
-Bake the donuts for 12 minutes or until cooked through. Use a toothpick to check if the donuts are done. Prick the toothpick into the donut and then remove it. If the toothpick comes out clean then the donuts are done. If the toothpick comes out with batter on it, then give the donuts a few more minutes in the oven.
-Once finished, allow donuts to cool.
-While your donuts cool, melt the additional two tablespoons of butter.
-In a small bowl mix together the additional 1 tablespoon of cinnamon and the 2 cups of white sugar.
-Brush a bit of the melted butter onto a donut and then coat with the cinnamon and sugar. Repeat this until all the donuts are coated.
-Enjoy! Store in an air tight container for up to 3 days.
