Pink + Red Cocktails! Frozen Paloma + Raspberry Lime Fizz
In our home we don’t truly celebrate Valentine’s Day. If anything we try to spice up a dinner at home or make some festive cocktails after the kids have gone to bed. My birthday falls the weekend prior to Valentine’s Day and Dan’s is the weekend after. So Valentine’s Day is just sort of there in the middle, begging for a quiet night at home. Though I will say that Valentine’s Day will always hold a little soft spot in my heart. It was Valentine’s Day 2015 that Dan told me he was ready to try for our second child. It was such a sweet and tender moment between the two of us. Mila was born that December.
However you choose to celebrate or not celebrate Valentine’s Day, cocktails are always a good idea! Below are two simple and yummy options. Enjoy & Happy February!
Frozen Pink Paloma
What You Need *Makes Three
2 cups ice
1 1/2 cups grapefruit juice
4 oz tequila
2 oz lime juice
lime slices + pink sprinkles for garnish
What You Do
Start by adding ice into the blender.
Then pour in the grapefruit juice, lime juice, and tequila.
Blend until smooth!
Rim your glasses by dipping the rim into a wet paper towel on a plate. Then dip the wet rim into pink sprinkles. Now the sprinkle rim might seem unnecessary, but it adds such a night sweetness to this really tart cocktail! Trust me, it makes the drink! ;)
Pour the blended cocktail into the sprinkle rimmed glass, top with a thin slice of lime, and ENJOY!
Raspberry Lime Champagne Fizz
What You Need
1 cup fresh raspberries
1 tablespoon white sugar
2-3 limes
Champagne or Prosecco
What You Do
In a small sauce pan on low heat, starting warming up your raspberries, sugar, and the juice of one lime. Stir so the sugar and lime juice coat all the raspberries and let them slowly cook down. Use a potato masher or fork to start breaking down the raspberries until a sauce forms.
Take it off the heat and strain the mixture to remove all the raspberry seeds. Store your raspberry syrup in an air tight container for up to one week. Aside from this cocktail, you can use it to top pancakes or drizzle some on top of your oatmeal!
Spoon about a tablespoon of raspberry syrup into the bottom of each Champagne glass. Then fill the glass with your favorite Champagne or prosecco. Top with a fresh raspberry and tiny sprinkle of fresh lime zest. It is a bubbly tart cocktail that I LOVE! (You can also swap the raspberries for any kind of fruit you like best)
